INGREDIENTS FOR FILLING:1 (8-oz.) pkg. cream cheese, softened1 c. pumpkin puree1/2 c. (1 stick) unsalted butter, melted2 large eggs1 tsp. pure vanilla extract1 (16-oz.) box confections' sugar, plus more for dusting1 tsp. pumpkin pie spice
Step 1: Preheat the oven to 350°. Coat a 13" x 9" baking pan with cooking spray.
DIRECTIONS FOR CRUST:
Step 2: In a large mixing bowl, combine the cake mix, egg, and butter with a rubber spatula. Press into the bottom of the prepared pan.
Step 1: In a large mixing bowl, combine cream cheese, pumpkin puree, and butter until smooth. Whisk in the eggs and vanilla until fully integrated.
DIRECTIONS FOR FILLING:
Step 2: Whisk in the confectioners' sugar and pumpkin pie spice until thoroughly mixed. Pour over the crust.
Step 3: Bake the bars for 40 to 45 minutes, or until the sides are set but the center remains somewhat jiggly. Let it cool.
Step 4: Dust with confectioners' sugar and cut into squares.
