Try This Quick & Healthy Turkey Lavash Wrap For Lunch

Traditionally baked on the hot walls of a clay oven, it has a deliciously subtle smoky flavor and slightly chewy texture that makes it ideal for dipping, wrapping, and scooping up a variety of foods.

It also works well in wraps because it is large enough to hold a lot of filling but thin enough to allow each ingredient to have its moment to shine.

INGREDIENTS: 1 scallion, thinly sliced 4 oz. crumbled goat cheese 4 oz. plain whole-milk Greek yogurt 3 tsp. extra-virgin olive oil, divided Kosher salt Freshly ground black pepper 4 c. loosely packed arugula 1/2 c. coarsely chopped fresh dill 1 tsp. fresh lemon juice 4 store-bought or homemade lavash 1/2 lb. sliced deli turkey, divided 4 roasted red peppers, cut into thin strips, divided (about 1 c.) 4 Persian (or 2 English) cucumbers, cut lengthwise into quarters, divided

Step 1: Combine the goat cheese, yoghurt, scallions, and two teaspoons of oil in a medium-sized bowl. Season with salt and pepper.

DIRECTIONS:

Step 2: Combine the rocket, lemon juice, dill and remaining 1 teaspoon oil in a big bowl and toss gently to mix.

Step 3: Arrange the lavash on a work surface. Over the bread, evenly spread the goat cheese mixture, leaving a 1-inch border around the edge. Divide turkey, red peppers, cucumbers, and arugula salad among wrappers.

Step 4: Pull one half of lavash up and over filling like a burrito, then tightly wrap to enclose. Tuck in ends to seal. Cut in half before serving.
