INGREDIENTS: 1 medium yellow squash (about 1/2 lb.), cut into 1/4" rounds 1 medium zucchini (about 1/2 lb.), cut into 1/4" rounds 1 large red onion, thinly sliced 4 cloves garlic, thinly sliced 2 c. cherry tomatoes 1/4 c. extra-virgin olive oil, plus more for drizzling 1 tsp. Step 1: Preheat the oven to 425°. Combine yellow squash, zucchini, onion, garlic, tomatoes, oil and Aleppo pepper in a 13 x 9-inch baking dish. Season with black pepper and salt.
