Greek Grilled Cheese Recipe

Our contents are sandwiched (literally) between shredded mozzarella and buttered sourdough, resulting in a flavor-packed bite that contrasts beautifully with our melty cheese.

While these vegetables are difficult to beat in my opinion, you can go pretty creative here. Add your favorite Mediterranean-inspired flavors to make your own dream grilled cheese.

INGREDIENTS: Softened butter, for bread 8 slices sourdough bread 3 c. shredded mozzarella 1 c. crumbled feta 1 (16-oz.) jar roasted red peppers, drained and chopped 1/2 c. pitted kalamata olives, halved 2 Tbsp. freshly torn dill

Step 1: Butter one side of the bread slices and arrange four of them butter-side down. Top each slice with a quarter of the mozzarella, feta, roasted red peppers, kalamata olives, and dill. Top each with the remaining bread slice, butter side up.

DIRECTIONS:

Step 2: Heat a large skillet over medium heat. Cook one of the constructed sandwiches for 2 to 3 minutes, until the bread is golden and the cheese is melted. Flip and cook for another 2 to 3 minutes, until browned.

Step 3: Repeat with the remaining sandwiches to create 4 total.
