INGREDIENTS: 2/3 c. mayonnaise 1/4 c. red wine vinegar 1 Tbsp. sliced chives, plus more for serving 1 tsp. garlic powder Kosher salt Freshly ground black pepper 2 lb. Yukon Gold potatoes, boiled, cut into 1" pieces 10 slices bacon, cooked, crumbled 2 jalapeños, thinly sliced 2 c. shredded cheddar

Step 1: In a medium bowl, whisk together mayonnaise, vinegar, chives, and garlic powder. Season with salt and pepper.
