INGREDIENTS: 1/4 c. mayonnaise 2 Tbsp. ketchup 1 Tbsp. sweet pickle relish 1 Tbsp. yellow mustard 1 tsp. hot sauce

INGREDIENTS: 1 lb. ground beef 6  (5") flour tortillas 2 tsp. store-bought or homemade burger seasoning Kosher salt 6 Tbsp. neutral oil, divided 6 slices American cheese, divided 18 thin bread-and-butter pickle slices 1 c. shredded iceberg lettuce 3 Tbsp. chopped yellow onion White sesame seeds, for serving

Step 1: In a small bowl, add mayonnaise, ketchup, relish, mustard, and spicy sauce.

DIRECTIONS FOR BURGER SAUCE:

Step 2: Prepare sauce up to 3 days ahead of time. Cover the bowl and refrigerate.

Step 1: Cut beef into 6 chunks of 2 1/2 ounces each. Top each tortilla with a serving of steak. Using a fork, flatten the beef on top of the tortilla, leaving a 1/2-inch border. Sprinkle with 1/2 teaspoon hamburger seasoning and a pinch of salt.

DIRECTIONS FOR SMASH BURGER TACOS:

Step 2: In a large skillet over medium-high heat, heat 2 tablespoons oil and swirl to coat. Arrange two tacos, beef side down, in a skillet and flatten with a sturdy spatula or burger press.

Step 3: Cook until the steak is browned and cooked thoroughly, about 2 to 3 minutes. Flip tacos, add a slice of cheese to each, and heat for another 1 minute, or until cheese is slightly melted. Transfer to a baking sheet. Repeat with the remaining four hamburger tacos.

Step 4: Top each taco with burger sauce, pickles, lettuce, onion, and sesame seeds.
