Brownie Ice Cream Sandwiches A Cool Treat On Hot Days

The classic pairing of a chocolate brownie and vanilla ice cream is hard to beat, but just about any ice cream would be good here.

If I wanted to change it up, I'd go with mint chocolate chip or strawberry.

INGREDIENTS: Cooking spray 1 (16-oz.) box brownie mix, plus ingredients called for on box 2 c. vanilla ice cream, softened

Step 1: Preheat oven to 350°. Line a 13" x 9" baking sheet with parchment paper, allowing an overhang on two long opposing edges. Coat with cooking spray. 

DIRECTIONS:

Step 2: In a large mixing basin, prepare brownie batter according to package directions. Pour onto the prepared pan and distribute in a uniform layer.

Step 3: Bake brownies for 20-24 minutes, or until a tester comes out with moist crumbs. Let it cool.

Step 4: Use parchment overhang to remove brownies from pan. Line the same pan with parchment, leaving an overhang on two long opposing edges.

Step 5: Cut the brownie in half parallel to the work surface to form two pieces (13" x 9"). Arrange one half cut side up in the prepared pan. Spread ice cream in an equal layer over the brownie. 

Step 6: Top with the second half, cut side down, and carefully push so that the sides of the brownies meet the ice cream. Freeze for at least two hours or up to a month before serving. 

Step 7: Use the parchment overhang to remove sandwiches out of the pan. Cut in half lengthwise, and then into four pieces. Serve immediately or return to the freezer.
